I hope everyone has settled in to the new year. Many of you have made resolutions and are well on your way to achieving your goals. Some of us choose not to make any, but still strive to improve something about ourselves. I know I am always looking for new and healthy recipes to try. Especially ones that are easy to make! The following recipe is a twist on a standard, but I really love tacos so I wanted to share it! Give it a try and let me know what you think!
4 whole wheat tortillas
1 lb. ground chicken (can used cooked shredded chicken breast)
1 cup canned corn
½ cup black beans (rinsed and drained)
1 cup chopped tomatoes
Sauté the ground chicken until the meat is thoroughly cooked through.
Assemble the chicken, black beans, corn, tomatoes, lettuce into the whole wheat tortillas. Top with shredded cheese and a tsp. of sour cream. Enjoy!
